Southwestern Bruschetta

The fresh taste of basil and crisp bite of bell peppers create the perfect combination for this southwest style bruschetta. These easy and tasty appetizers are perfect to make ahead of time as they will only taste better the longer the flavors have to combine.

1 loaf french bread

¼ c mascarpone cheese

2 Tbsp. plain greek yogurt

½ tsp. Cumin

¼ tsp. Chipotle chile powder

1 yellow bell pepper, diced

1 orange bell pepper, diced

Bunch of fresh basil, chopped

1 Tbsp. olive oil

1 Tbsp. balsamic vinegar

1 avocado


In a small bowl, combine mascarpone cheese, greek yogurt, cumin, and chile powder; cover and refrigerate.

In a separate bowl, combine the diced bell peppers, basil, olive oil, and vinegar; cover and refrigerate.

Just before serving, slice bread, cover each piece with a layer of cheese mixture and a spoonful of the bell pepper mixture; top with a slice of avocado.
