Mike Kohler heads the Dairy Producers of Utah organization and works with our farmer relations staff. This recipe comes from his Grandma Buck who made them for special occasions. Whenever Grandma showed up with the cookies, Mike would snitch them - one time confiscating the entire plate. Since he loved them so much, Grandma Buck started a tradition of making Mike a special batch on his birthday.

They make a great addition to your holiday baking tradition. Day 6 of our 12-Days of Christmas Cookies


1 8oz package chopped dates

1/2 cup sugar

1/2 cup chopped nuts, walnuts or pecans

1/2 cup water

1 cup butter, softened

1 cup brown sugar

1 cup white sugar

3 eggs, well beaten

1 tablespoon vanilla

4 cups flour (more if needed)

1 teaspoon baking soda

1/2 teaspoon salt


Combine chopped dates, 1/2-cup sugar, chopped nuts and water in saucepan. Cook over medium heat, stirring until mixture thickens. Cool.

Beat together butter, brown sugar and 1-cup white sugar. Beat in eggs and vanilla. Stir in flour, soda and salt. Add additional flour as needed.

Roll dough out on wax paper into 13x17" rectangle. Spread cooled filling over cookie dough. Using wax paper as a tool, roll the filling inside the dough - jelly roll fashion. Wrap and refrigerate overnight.

Preheat oven to 350 degrees.

Slice roll into 1/4-inch thick slices. Place on baking sheet and bake for 10 minutes.
