Chef and Registered Dietitian Nutritionist Michele Redmond will kick off this year’s Breakfast & Briefing with an interactive tasting skills activity that explores how taste appreciation connects to health, and consumer food choices. We’ll discuss motivations behind food choices, disconnects to defining nutritious foods and how taste perception is rarely addressed by nutrient-density definitions. Common definitions of nutrient-density often confuse consumers, exacerbate the perception that nutritious foods lack flavor, and limit food diversity and flexibility. This session will introduce the nutrient-density continuum, which encourages food choices that promote good health, while recognizing how taste can guide consumers to eat for both health and happiness. Registration is $10 per guest which includes breakfast, parking and attendee gift.
