From our own Libby Lovig who handles all of our Nevada operations comes this family favorite - a chocolate cookie with creamy mocha frosting.
These cookies are delicious on their own - a sort of cookie / cupcake blend and extra special topped with a walnut half or chocolate kiss.
Day 5 of our 12-Days of Christmas Cookies
1/2 cup butter
2 squares (1 oz each) unsweetened chocolate
1 cup brown sugar
1 teaspoon vanilla
1/2 cup buttermilk
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped nuts
1 package (6oz) semi-sweet chocolate bits
1/4 cup butter
2 tablespoons cocoa
2 teaspoons instant coffee
Dash of salt
2 1/2 cups powdered sugar
1 1/2 teaspoons vanilla
Enough milk to make frosting spreadable
Preheat oven to 375 degrees
Melt butter and chocolate squares together in saucepan. Cool 10 minutes. Stir in brown sugar. Beat in egg, vanilla and buttermilk.
Stir together flour, baking soda, baking powder, and salt; stir into chocolate mixture. Add nuts and chocolate bits, stir to mix.
Drop by teaspoonful on greased cookie sheet. Bake 10 minutes. Cool.
To make frosting:
Cream together butter, cocoa, coffee, salt, powdered sugar and vanilla. Add just enough milk to make the frosting spreadable.
Frost cookies with mocha frosting and top with a walnut half or chocolate kiss.
