Mac and Cheese

Everyone's favorite comfort food! Insane cheesey sauce, perfect from the pan or baked with crunchy topping. This is mom classic recipe, you make it your's with the cheese and add-ins. (It's my favorite-YUM)

  • Yields: 4-6 servings

Ingredients

2 cups dry elbow macaroni (about 8-oz)

2 tablespoons butter

2 tablespoons flour

2 cups whole milk (may substitute 1% milk)

2 cups shredded sharp cheese (see variations below)*

1 teaspoon dijon mustard

¼ teaspoon cayenne pepper, optional to taste

½ teaspoon salt, or to taste

¼ teaspoon pepper, or to taste

½ cup buttered crumbs, for baked version*

Directions

Cook macaroni according to package directions to al dente; drain; set aside while preparing sauce.

Over medium heat, melt butter in saucepan; whisk in flour until smooth and bubbly, continue to cook until flour and butter turn a pale yellow (about 3 minutes). Gradually whisk in milk, continue to stir until mixture thickens and comes to a boil; gently boil 1-minute. Remove from heat, stir in mustard, optional cayenne pepper, salt and pepper to taste.

Saucepan version:

Return to heat, stir in cheese and fold in macaroni. Serve hot.

Baked version:

Preheat oven to 400 degrees. Butter 8-inch pan or casserole dish. Place cooked macaroni in casserole dish. Stir 1½-cups cheese into sauce; pour sauce over macaroni in casserole. Sprinkle top with remaining ½-cup cheese and buttered crumbs. Bake 20-25 minutes or until top is golden brown.

* Buttered Crumbs: Melt 1-tablespoon butter, add ½-cup bread crumbs or panko crumbs.

Leftovers are great used in a Grilled Mac and Cheese Sandwich

Variations

There are as many variations of Mac and Cheese as there are people who love it. Thanks to a few friends, below are several “add-ins” and flavor ingredients to make your comfort mac and cheese unique. Try one or two combinations.

Sharp Cheddar
Asiago
Gruyere
Smokey Gouda
Pepper Jack
Blue Cheese (try ½-cup blue with 1 ½-cup cheddar)
Parmesan (¼-½ cup mixed with other cheeses
Fontina

--Meats
Ham diced
Hot dogs, sliced
Sausage, cooked
Tuna fish
Crumbled cooked bacon
Prosciutto, chopped

--Vegetables
Canned Green Chiles, diced
Peppers - red or green bell; finely chopped jalapeno
Pimentos, chopped
Olives, black or green, sliced
Green onion, sliced
Pureed sweet potatoes or carrots
Cauliflower, cooked, mashed
California style frozen veggies
Sun dried tomatoes, sliced chopped
Sliced tomatoes, arranged around the edge

--Toppings:
Bread crumbs
Sesame seeds
Sliced tomatoes around the edge
Nuts - cashews, almonds - chopped, mixed with a few crumbs
Potato chips, crushed

--Seasonings:
Herbs - fresh or dried - oregano, thyme,
Taco - 1-package mixed with ground beef, follow pkg directions for mixing
Tabasco sauce - few drops
Worcestershire sauce - ½ to 1 teaspoon
Garlic salt or powder
Ranch dressing - 1 envelope dry mix or to taste
Ketchup or barbecue sauce
Tomato soup - condensed, canned
Truffle oil
