For picnics and family gatherings Mom would make this favorite salad. She would adjust ingredients to whatever she had on hand, and her taste preference that day. She always had chives growing near the house and, much to my dismay, would add snipped chives to the mix. This has always been one of my favorites – without the chives – although I will add chives for nostalgia or garnish. Even my cousins remember my Mom for her Ham and Cheese Macaroni Salad.

Yields: 12-14 Servings
4 cups uncooked elbow or shell macaroni
1 pound ham, diced
1 pound cheese, diced
1 cucumber, seeded and diced
1/2 bell pepper, chopped (more or less to taste)
1 bunch sliced green onions or snipped fresh chives
1/2 cup fresh or frozen green peas, optional
1 cup salad dressing (more or less to taste)
1-3 tablespoons milk
Salt and Pepper to taste
Cook macaroni according to package directions. Drain, rinse in cold water and drain thoroughly.
Combine macaroni with diced ham and cheese, cucumber, bell pepper, onions, and peas.
Stir milk into salad dressing; add enough dressing to the salad to create desired consistency and moistness. Salt and pepper to taste. Garnish with additional fresh snipped chives and or chopped bell pepper.
