Grilled Mac and Cheese Sandwich

We just can’t give up Mac and Cheese, the ultimate comfort food. When hot, mac and cheese is ooey gooey, but as it cools it firms up to make the perfect grilled sandwich. Excellent served with Creamy Tomato Basil Soup.

  • Yields: 4 servings


8 slices bread

Butter, softened

4 slices cheese

1-1 ½ cups cooked Mac and Cheese leftovers

Creamy Tomato Basil Soup


As needed, prepare Mac and Cheese from scratch recipe, or use a cooked frozen Mac and Cheese.

Prepare Creamy Tomato Basil Soup.

Butter one side of each slice of bread, place cheese slices on the unbuttered side of 4 of the slices; top each cheese slice with about ¼-⅓ cup macaroni and cheese. Place remaining slices bread, butter side out, on the mac and cheese. Grill sandwich on both sides until toasty brown and cheese is melty. Serve hot with hot soup.

Wonderful segue from winter to spring. Great way to use leftover Mac and Cheese. Recipe is extremely adaptable, depending on bread used, preferences, and the Mac and Cheese recipe.

I showed the photos to my niece this morning – one with the sandwich cut. She immediately described how her son would see it – “octopus sucker samich w cheese,” and he would LOVE IT! Perhaps you would like to rename the recipe to "Octopus Sucker Samich with Cheese" for your adventurous kids!
