Cookies ‘n Cream Ice Cream Pie

Not only is this Ice Cream Pie easy and delicious, but it's fun to make! You can't beat a rich cookie crust topped with chocolate fudge sauce, creamy ice cream, and fun toppings on a hot summer day. Plus, the best part about an Ice Cream Pie is you can't really mess it up! Tailor this delicious Cookies 'n Cream Pie to fit your individual taste buds. Switch up the ice cream or add extra toppings. The whole family will enjoy this tasty fun dessert.


22 chocolate sandwich cookies or 10 chocolate graham cracker sheets

2 tablespoons butter, melted

2 quarts cookies n' cream ice cream*

chocolate fudge sauce

6 ounces semisweet chocolate chips

1/2 cup heavy cream

1 tablespoon butter


1 cup heavy cream

2 tablespoons sugar

1 teaspoon vanilla


Begin making the pie crust by removing the filling from the chocolate cookies. Blend cookies without filling until it forms a powder. Press blended cookies to the bottom of a 9 inch pie pan. Set aside.

Melt chocolate chips, heavy cream, and butter in a glass bowl for 30 seconds in the microwave. Stir. Continue cooking for 15-30 second intervals and stirring in-between until the chocolate is melted and the mixture is combined. Pour 2/3 of the mixture on top of the pie crust and spread evenly with a spatula. Freeze the crust for 15 minutes.

While the crust is freezing take out the ice cream to thaw and make whipped cream. Whisk together heavy cream, sugar, and vanilla until stiff peaks form.

Take the crust out of the freezer and scoop ice cream evenly on top. Spread whipped cream on the ice cream and top with additional cookies and leftover chocolate fudge sauce. Freeze, serve, and enjoy!

*Substitue cookie's n' cream ice cream for your favorite ice cream and mix up the toppings for your personal favorite ice cream pie.
