Scottish Chocolate Crumble Cookie

My family loves to bake cookies, especially during Christmas time. Whenever we make cookies during the month of December, we always set some aside in our Christmas cookie tin before either eating or giving the rest away. Then, on Christmas Eve, we break out the cookie tin and have a cookie fest with all the yummy cookies we have made during the month. We love being all together sharing some delicious treats and just enjoying each others' company. I want to share one of our favorite Christmas Time cookie recipes that always makes it into the cookie tin. It is rich and chocolatey, but not too sweet. I think these will soon become a family favorite in your home.

Day 1 of our 12-Days of Christmas Cookies

  • Yields: 24 Bars


1 cup butter (2 sticks)

2 cups flour

1/2 cup sugar

1/4 teaspoon salt

1 package (12oz) semi-sweet chocolate chips

1 can (12oz) sweetened condensed milk ~1 1/4 cups

1 teaspoon vanilla

2/3 cups coarsely chopped nuts (optional)


Great oven to 350

Beat butter until creamy, add flour, sugar and salt. Press 2-cups of shortbread-crust mixture into the bottom of a 9x13" baking dish.

Bake for 10 minutes

Mix 1 1/2 cups chocolate chips with the condensed milk. Heat over low heat or microwave in bursts of 20 seconds until chocolate is melted - stirring often.

Add vanilla and pour into baked crust.

Mix together remaining crust mixture, remaining chocolate chips and chopped nuts with a pastry cutter or fingers. Sprinkle over top of chocolate.

Bake 20 minutes.

Cool and cut into bars.
