Shanna Gibbons supports her husband Mark on their dairy farm in Northern Utah. She also works, cooks, gardens, cans (Note: she has an AMAZING canning cupboard!), serves as the President of the Utah Dairy Women’s Board, and is a committed mother and grandmother. Here Shanna shares a fall farm favorite. With delicious in-season apples, Shanna makes her own apple pie filling to stock her pantry.

~ Apple Streusel ~

  • 2 cubes butter
  • 1 3/4 c sugar
  • 4 eggs
  • 1 t vanilla
  • 3 c flour
  • 1/2 t salt
  • 1 1/2 t baking powder
  • 1 large apple pie filling

Blend butter, sugar, eggs, and vanilla. Add flour, salt & baking powder. Divide the dough in half and spread half of the dough on a large cookie sheet. Spread apple pie filling next and finally drop spoonfuls of remaining dough on top and kind of spread them out a little bit. Bake at 350 for 35 minutes. Make frosting (see below) and drizzle over streusel while it is still warm. Enjoy!

Frosting: Powdered sugar, milk or cream, and almond flavoring. Put powdered sugar in a bowl, add a little milk to make glaze or thin frosting, add almond flavoring and drizzle over Apple Streusel. Serve it warm – Delicious!
